1. Rainbow jelly shots

Rainbow Cherry Shots
You will need:
720ml water
6 sachets gelatine
1 box strawberry jelly
1 box lemon jelly
1 box blueberry jelly
700ml flavored vodka
36 cherries
Pour 240ml water in small saucepan, sprinkle with 2 sachets gelatine and allow to soak for a minute or two. Heat over low heat, stirring constantly, until gelatine is dissolved.
Remove from heat add a box of blueberry jelly, stir until dissolved. Stir in 240ml cup of vodka. Pour mix into the pan and refrigerate until fully set.
Repeat above instructions for subsequent layers. If adding a cherry, put these in at the second layer.
To serve, cut into desired shapes.

2. Butterbeer Jelly Shots

Butterbeer Jelly Shots
You will need::
1 can cream soda
2 sachets gelatine
75ml vanilla vodka
225ml butterscotch schnapps
Coloured large crystal sugar, for garnish, if desired
Wooden coffee stirrers (for the stems)
Pour the cream soda in a medium saucepan and sprinkle with gelatine. Allow to soak for a minute or two. Heat over low heat, stirring constantly, until the gelatine is dissolved.
Remove from heat, stir in the vodka and schnapps. Pour into standard loaf pan (approx. 9" x 5").
Refrigerate until fully set. Cut into desired shapes and put on sticks, dip in colored crystal sugar immediately before serving, if desired.

3. Blueberry martini jelly shots




You will need:
275 ml Stoli Blueberry vodka *50 ml simple syrup
3 1/2 sachets of gelatine powder
About 60 fresh blueberries
Off heat, combine the vodka and simple syrup in a small saucepan. Add gelatine powder to the vodka mixture.
Heat the saucepan over low heat, stirring, until the gelatine is dissolved.
Remove the pan from the heat. Place a few blueberries in the bottom of each individual ice cube mold, and carefully pour the vodka mixture into each. Refrigerate the ice cube tray until set.

4. Strawberry margarita jelly shots




You will need:
2 punnets of strawberries
1 box strawberry jelly
240 ml tequila,
240 ml water
Sugar and sliced lime for garnish
Cut the bottoms of the strawberry flat to get them to stand upright making sure there are no holes at the bottom and using a paring knife or small spoon, hollow out the berries.
Boil one cup of hot water in a saucepan, then add in jelly packet and stir until completely dissolved. Set aside. Add cold tequila to hot jelly mixture and stir to combine.
Pour mix into strawberries and chill overnight. Pour some sugar on a plate and rim your strawberries with it. Garnish with cut lime triangles to finish. Keep really cold until serving.

5. Dragonfruit shots




You will need:
Raspberry jelly packet
Pear Vodka
Dragon fruit pulp
A thinly sliced kiwi
Mix contents of jelly packet with 480 ml water. Boil until completely dissolved, stir occasionally.
Remove from heat, add the dragonfruit pulp and 1 cup of pear vodka. Stir, pour into mold, and set in the fridge for about an hour. Remove from pan and garnish with sliced kiwi.

6. Orange Slices




3 medium oranges, halved and slices removed
1 packet orange jelly
240 ml boiling water
120 ml fresh orange juice
120 ml cup vodka
Mix contents of jelly packet with 480 ml water. Boil until completely dissolved, stir occasionally.
Remove from heat, add juice and vodka until combined.
Pour into orange halves and carefully transfer the container to the fridge. Let set at least four hours or overnight. Slice into thirds or fourths and serve.

7. Watermelon lime jelly shots




You will need:
10 limes, pulp removed
1 box watermelon jelly (but strawberry will do if not)
240 ml boiling water
240 ml cold vodka (Even better if you have melon flavored)
Mini chocolate chips
Halve limes and scoop the pulp from the rind. Set aside, empty side up.
Make jelly mixture as per instructions.
Remove from heat, stir in cup of cold vodka.
Pour mixture into lime halves, filling all the way to the top. Chill in the fridge for at least 2 hours.
Using a sharp knife, carefully cut each lime half in half again, making wedges and stick in chocolate chips, if desired.

8. Elderflower mojito jelly shot




You will need:
1 package fresh mint
120 ml white rum
120 ml Elderflower Liqueur
75 ml fresh lime juice
75 ml water
75 ml simple syrup
2 envelopes plain gelatine
Lightly crush mint in a small bowl. Add the rum and elderflower liqueur to the bowl and set aside.
Combine lime juice, water and simple syrup in a small saucepan. Sprinkle with gelatine and allow the gelatine to soak for a minute or two. Heat over low heat, stirring constantly, until the gelatine is dissolved.
Remove from heat. Strain the mint-infused liquor into the pan and stir to combine.
Refrigerate until fully set, several hours or overnight. A few hours before serving, “paint” a floral pattern on the surface of the jelly shots with a paintbrush and food colouring.
Return pan to fridge to allow the food coloring to set. Cut into desired shapes to serve.

9. Cosmopolitan jelly shot




You will need:
240 ml cranberry juice cocktail
240 ml orange flavored vodka
60 ml cup lime juice
60 ml Cointreau or Triple Sec
2 ½ sachets gelatine
Lime zest for garnish, if desired
In a saucepan, sprinkle cranberry and lime juices with gelatine. Allow to soak for a few minutes. Heat on low, stirring constantly, until gelatine is fully dissolved.
Remove from heat, stir in the liquors, making sure to fully incorporate. Pour into pan or molds, and chill until set, several hours or overnight. Cut into desired shapes to serve and garnish with the lime zest.

10. Neon shots




You will need:
180 ml pear flavored vodka
120ml Midori
120 ml diet fizzy lemonade *120 ml cup Lemon syrup/juice
2 sachets gelatine
Combine the soda and lemon syrup in saucepan on stove. Sprinkle with gelatin and allow to sit for several minutes.
Heat over very low heat, stirring constantly, until gelatin is fully dissolved.
Remove from heat and add the vodka and Midori. Pour into standard loaf pan, and refrigerate until fully set – several hours or overnight.
Cut into cubes. Garnish with edible gold leaf if desired.

11. Ocean Margarita




You will need:
180 ml tequila
120 ml Blue Curacao
180 ml lime syrup
80 ml water
2 sachets gelatine
1-2 tbsp sugar (if desired)
Pour lime syrup, sweetener and water in a saucepan, sprinkle with gelatine. Allow gelatine to soak for a few minutes.
Heat over very low heat until gelatin is dissolved, stirring constantly. Remove from heat, stir in tequila and Blue Curacao.
Pour into pan (8" x 4") and refrigerate until fully set . To serve, cut into desired shapes.
